The withering lasts about 3 months, with pressing at the beginning of January. Fermentation takes place in steel tanks with controlled temperature. Aging lasts for 24 months in oak barrels. At sight it has a ruby red color, with some slight orange nuances due to long aging.

The scent is spicy with hints of currants and raspberries, cocoa and balsamic notes. On the palate it is warm and velvety, loving, reminiscent of the scent with a persistent finish. Particularly suitable to accompany meat dishes and aged cheeses.

To be served in large crystal glasses at a temperature of 16-18 ° C; enhances its qualities if decanted for at least an hour before being drunk.

Amarone della Valpolicella expresses all the character of the land of origin and the tradition of master winemakers. It is able to tell the story of the territory of origin and enhance it internationally. The vineyards are all grown on land with particular characteristics, rich in tuff, clay and limestone, located between the towns of San Pietro in Cariano and Fumane. The breeding system is the classic Trentino pergola with an average age of 30 years. The grapes used are: Corvina Veronese, Corvinone, Rondinella and other autochthonous vines known already in the pre-Roman era.

The harvest takes place manually towards the end of September, with careful selection of the grapes. placed in boxes and then re-selected again in the fruit tree bunch by bunch, in order to allow a perfect drying. After 4 months, the crushing is carried out and then the fermentation in Slavonian oak casks and then in the bottle for about a year. The wine has a ruby red color, full and intense. A paradise of intense, elegant and inebriating perfumes: dark fruit like raspberries, cherries and blackberries, with notes of licorice ending with a hint of bitter cocoa.

Amarone della Valpolicella can be drunk either alone or combined perfectly with braised stracotti and grilled red meat and aged cheeses. It should be served at 20 ° C in a wide glass like Grand Ballon which guarantees a good oxygenation and decanting of at least 1 h is recommended.

Take your time, be patient and enjoy your emotional masterpiece!
