<p>The withering lasts about 3 months, with pressing at the beginning of January. Fermentation takes place in steel tanks with controlled temperature. Aging lasts for 24 months in oak barrels. At sight it has a ruby ​​red color, with some slight orange nuances due to long aging.</p>
<p>The scent is spicy with hints of currants and raspberries, cocoa and balsamic notes. On the palate it is warm and velvety, loving, reminiscent of the scent with a persistent finish. Particularly suitable to accompany meat dishes and aged cheeses.</p>

										<content:encoded><![CDATA[<p>The Recioto della Valpolicella Classico DOCG Monte Gradela in 2012 won the gold medal of the Berliner Wein Trophy in 2018 (in the February edition): the largest and most important international wine tasting in Germany. All the wines presented are previously analyzed in a technical laboratory and then tasted by a jury of experts according to strict guidelines. The tasting lasts 4 days and it is on the last day that the coveted medals are awarded: Double Gold, Gold or Silver.</p>
<p>The huge quantity of wines presented makes the experts more and more difficult to make the right choice. A DWM Medal is a symbol of quality. A wine awarded to the BWT can only be a high quality product, rewarded by true connoisseurs.</p>
<h3>Organoleptic description:</h3>
<p>The Recioto is the fulcrum of the history and tradition of Valpolicella. It is a red wine of great structure and good alcohol content, with sugar residues that make it sweet. Garnet-red in color, sometimes with orange-colored fingernails for long maturation. On the nose it has a characteristic scent of overcooked fruit and jam of black cherries and raspberries, small red fruits in alcohol, ginger, sweet with light cocoa, balanced harmonious spice. A full, warm, long and velvety taste, sweet with light hints of cocoa and spices, undoubtedly leaves the palate satisfied. It should be sipped at room temperature, never lower than the wine cellar, in very large crystal glasses. Very captivating wine, to drink outside meals that goes perfectly with dry desserts, with little cream or cream, like panettone, pandoro, pies and short pastry.</p>
<h3>How is the Recioto della Valpolicella born?</h3>
<p>It is a blend of Corvina Veronese, Rondinella and Molinara grapes. The vines are grown in soils with south-west exposure from 150 to 300 meters above sea level. The harvest takes place at the end of September, strictly by hand by specialized personnel, who subsequently re-select the bunches in the fruit bowl to obtain the perfect withering, giving the future wine the unique and unrepeatable characteristics that distinguish it. Of these cultivars only the sparse and ripe bunches (recie) are chosen. The name &#8220;Recioto&#8221; derives from the dialect word &#8220;recie&#8221; which has a rather significant Latin reference (recis = bunch). At one time, much more than in our days, the wings of the bunches were used (also called &#8220;recie&#8221;, ears, for their lateral position) or the tips of the bunches themselves. The vinification, according to the years, takes place from the end of January to the end of February with a roller crusher, operating a partial de-stemming, with a very long 40-day maceration. The aging in bottle instead lasts over 8 months.</p>

<p>The grapes used are: Corvina Veronese 60%, Corvinone 20%, Rondinella 10% and other autochthonous vines known already in the pre-Romanesque period 10%, cultivated with the Veronese pergola system. The harvest is done manually at the end of September.</p>
<p>Vinification takes place at controlled temperature in steel for about 10 days. This wine is subsequently refermented on the sweet pomace of Recioto for 13/16 days with continuous daily pumping over. Aging takes place for 24 months in Slavonian oak barrels and for 6 months in bottle.</p>
<p>At sight it has an intense ruby ​​red color, rich and spicy aroma with notes of coffee and licorice. You can immediately notice the strong balance between the fruity and spicy notes, this allows an easy pairing of the wine with first and second courses but also an appreciation of the wine alone, as a meditation wine. 										<content:encoded><![CDATA[<p>Wine with a bright red color, which inebriates you with its scent of small red fruits like cherry and black cherry, with final notes of liquorice, intense and spicy aroma. On the palate it is full, dry and balanced which improves with aging. It is produced with San Giovese grapes, Cabernet Franc, Corvina, Cabernet Sauvignon and Croatina, grown in the vineyards located to the east of Lake Garda with the Veronese pergola system. The harvest takes place in mid-September, strictly by hand, in plateaux. The grapes are brought and stored in the fruit cellar, where we guarantee the ideal climatic conditions on a daily basis to allow perfect drying, which lasts about 90 days. The vinification lasts 18 months and takes place in Slavonian oak barrels. To fully enjoy it, uncork the bottle 30 minutes before serving, pour it in large crystal glasses at a temperature of about 18-20 ° C. Its full flavor is a perfect combination with meat, especially roasts, cannelloni, braised meats, medium-aged cheeses, risottos or sliced ​​beef.</p>
