Grappa obtained from the distillation of the same blend of grapes that gave rise to our San Nicola, and therefore mainly marc of San Giovese and Cabernet Franc.
The latter give special scents to the grappa, a persistence and an aftertaste that ranges from fruit in alcohol to the most particular spices with a hint of cloves that amalgamates everything.
The distillation takes place in bain-marie in double boiler stills, a very ancient technique with slow and discontinuous extraction; refining in stainless steel tanks.
