VINIFICATION: vinification in steel fermenters, following the Martinotti-Charmat method. The first fermentation allows for an excellent fruity base with an intense pink color. On this basis the second fermentation is carried out (always in steel), from which a fine and delicate perlage is obtained.
REFINING: // ORGANOLEPTIC ANALYSIS: pink color that recalls all the fruit found in the mouth at the time of tasting; bright reflections, fine perlage. The balanced acidity makes it pleasant and drinkable.
PAIRING: excellent served fresh (below 10 ° C); perfect companion of aperitifs and fish dishes. Even in combination with fresh and grilled vegetables it expresses its full potential.
